Shrimp Pasta Salad

tomatoes, basil, rotini, mozerella, limon, and shrimpMy brother came to visit from Illinois. He loves to cook as much as I do. As we were thinking of what to cook for dinner he mentioned a tomato, basil, rotini. The ingredients were close to a caprese salad. I knew we needed meat in it to make it dinner. So my suggestion was shrimp. The pasta came out mouthwatering and our very large dish did not last one day. Everyone was very impressed. All 4 of my kids and hubby. The recipe I wrote for it will feed at least 6 so you can cut down the ingredients some to make a smaller portion. Here is the recipe.

Ingredients:

  • 1 box Ronzoni Smart Taste Rotini noodles
  • 16 oz grape tomatoes
  • 1 lb finely shredded mozzarella cheese
  • 3 lemons
  • 1 lb medium shrimp (peeled & deveined)
  • Italian seasoning and garlic powder
  • olive oil

Directions:

  1. Cook the box of pasta noodles according the box directions. drain and put to the side.
  2. In a skillet drizzle a little EVOO and let it heat up. Rinse your shrimp and add them to the skillet. add your favorite Italian seasoning and garlic powder. Cook over medium heat until brown. My Xtrema skillet worked wonders for this.
  3. Cut the grape tomatoes in 1/2 and chop the fresh basil.
  4. Mix the pasta, grape tomatoes, basil, and shredded mozzarella cheese in a large bowl.
  5. Grate the outside of the lemons for the zest, into the bowl with the mixture from above. Then cut the lemons in 1/2 and squeeze the juice into the bowl.
  6. Make sure the pasta is mixed well.
  7. Add the cooked shrimp to the pasta.
